Well its that time of year....Back to School time. I don't know about you all, but this summer has just flown by and I cannot believe my son will be in the 2nd grade. It's just amazing! And with all the preparing that goes into this last month before school like; backpacks, school supplies, clothes and shoes, and a new bedtime schedule, its really important to think about getting your son or daughter in for an eye exam. That way they can determine even before school begins whether they will need eyeglasses.
Usually you are required by the school district when children begin school in Kindergarten, but I feel that getting their eyes checked every year is the best option. You never know when sight can change. Its especially important to do this if you see your child squinting, closing one eye while watching TV, or holding his papers or books really close to his/her face while reading or writing. Those are signs that they may need prescription eyeglasses!
My son has had many eye exams and usually they have been a very quick process. He hasn't had any problems but from friends with children who do, they may need to have other exams to determine the severity of their sight issues. If your child does need glasses, it can be an adjustment for them. Remember that they need a little time to get used to wearing them and may need your help to give them some confidence. I know a few children that wear glasses and at first it was hard, but after some time, wearing glasses became just part of their routine.

I realize that glasses can be very expensive at times, and in today's economy we need to search for places that have the best frames and better deals. I received a great pair of glasses online just the other day and I have to say I was very impressed. Glasses USA offers many options for adults at great prices. They even recycle and give those glasses to agencies that offer them to people in need.

So remember, take your child to the doctor and have their sight checked. Its so important. And also, head on over to Glasses USA and check out their selection of frames.

Le Creuset and Chicken Divan

With these cold weather days and even colder nights, I am always in the mood for comfort food. I don't know about you but there is just something so comforting in having a nice casserole for dinner too!
I was thinking about when I was young and how my mom would have that casserole in the oven when I got home from school and the house always smelled so good and so inviting. Most times when I brought friends home, they would end up staying for dinner! (I guess they couldn't resist the yummy smells either! LOL)
So, I thought I would start making the one casserole that I absolutely love and hey, I'm not to proud to say that it is SO easy as well! The quicker and easier the better for us busy mom's right?
What makes this even better is that I was able to make this delicious Chicken Divan casserole in my new Le Creuset Bake Ware. I was so excited!
If you remember my post last week, I was saying that I had been contacted by Ashley at CSN Stores to do a review of any product I wanted. How great is that? And when I saw this Bake Ware, I new I just had to have it!

I just love this lime green color too! (I've been wanting to get a few pieces that brighten up my kitchen and I think this one is perfect!)
This Le Creuset 9" square baking dish is perfect for casseroles or really anything you want to make and serve right from the oven. A few ideas are chicken Parmesan, baked spaghetti, Lasagna, or Chicken Divan. (Recipe to follow!)
This poterie stoneware can be used in the oven, microwave or broiler and will not pick up any odors or flavors. It has a beautiful appearance, as you can see from my pic above, and it is so durable it resists chipping and stains.
And the greatest part is that when I was finished with dinner, clean up was a snap. I just rinsed off the dish and put it in the dishwasher. Yes ladies, dishwasher safe! Woo-Hoo!!
As an added bonus I got the 5" baking dish too. It is small but I can make Mexican dip, spinach artichoke dip, or even a yummy individual dessert and serve it in this beautiful bake ware.

So to show you how impressed I was with it, here is a picture of my delicious Chicken Divan casserole.

I can honestly say my family was so impressed with not only the casserole but the presentation as well. It looked really lovely!

This bakeware is a product I will definitely recommend and I am thinking of buying a stock pot in the same pretty lime green color for winter soups and stews. Just thinking about it makes me hungry! LOL

Now for the Chicken Divan recipe. Its fast, its easy, its delicious. Here it is.....
1 pkg frozen broccoli (16 oz)
4 small chicken breasts or small rotisserie chicken
1 TBSP lemon juice
1/2 TSP curry powder
1 can cream of chicken soup, fat free
1 cup light mayonnaise
2 cups shredded cheddar
bread crumbs for topping

I thaw out broccoli in microwave and add it to casserole dish. Then take your cooked chopped chicken and add that over broccoli. Mix together in bowl, can of soup, mayonnaise, 1 cup of cheese, curry, lemon juice and salt and pepper to taste.
Pour that mix on top and sprinkle with remaining cup of cheese and breadcrumbs. Bake at 350 for 40 minutes and it will come out bubbling and delicious. You can serve with rice or pasta or a vegetable, whatever you like! ENJOY!

Brrrr...Baby It's Cold Outside!

I hope you all have gotten into the swing of these cold and snowy winter days and nights. Try as I may, it's just not happening for me.
I just used to love the snow and would stay out for hours playing, skiing, building snow forts, or having snowball fights with my friends, but as I get older, I'm more of a nice and warm kind of gal!
I don't mind looking out at the beautiful snowflakes and admiring all Winter has to offer, but I prefer to do it from my living room window with a cup of coffee or tea in hand. And I love to see my son making a snowman and playing in all that white stuff as long as I'm standing in the doorway with my camera and slippers, LOL.
This is the way it is and I'm not too proud to say it. "I do not like the cold weather at all!" There, I said it, it's done, and I'm sticking to it. (Although don't tell my son this news cause it would break his heart I'm sure.)

So, here's to all of you. Have a wonderful winter, keep safe and warm, crank up that heat, pour a cup of tea and enjoy!!!

Now I'm off to grab my blankie and read a good book! :)

Merriest Christmas

Okay, once again it is that time of year where we are all scrambling to buy those last minute gifts, bake our goodies, wrap our presents, and even a few (who will remain nameless, LOL) that still are decorating the house and yard. It can be a very stressful time. Agree?
I am trying so hard to be organized, in fact, I had a list in early November of things to accomplish on a weekly basis...Then, as the season grew nearer, my list turned into daily tasks, all of which I vowed to complete. Did I do it? Who thinks they know the answer to this question? (Did you accomplish all of your Holiday items in advance this year?)
Or are you like me.....YES, I didn't stick to that list. I really fell off my schedule and now I am like flying around trying to get everything done. AND I still have a few small gifts to buy as well.... WHY, WHY, WHY?

Well, whether you are that organized gal, or the absolutely frazzled, crazy running around gal... I want to wish you all the best this Holiday season and may you and your loved ones share a memorable time together. Remember that those days go by so fast, so sit back and try to relax and enjoy!!!

Rockin' Around the Christmas Tree

The tradition of putting a Christmas tree up has been around for years. And as a young child, I always looked forward to the time when my mom and dad and I would decorate. And for several years we even had a tree decorating party with all of our family, friends and neighbors. Oh such fun!

To join around the tree with lights, ornaments, tinsel, candy.... Whatever it is that you choose to decorate that all special symbol of Christmas and tradition. It's a time to be merry and festive that's for sure!

How many of you have a family tradition that focuses on your Christmas tree? Do you go out and buy a real tree every year that smells like pine but sheds all those little needles throughout your house, LOL? Or do you use the same artificial tree (some now have lights already on it, Oh how I love thee!!!)?

The most important part of the tree, at leased for me, is the decoration. The possibilities are endless, but it does say a lot about who you are and what type of home you have right? Some people use friendly colored lights with ornaments their children have made and drape it with tinsel and popcorn strung on string. Others prefer to have a very classic tree with white lights, glass ornaments and silver beading. Both beautiful but VERY different!

Whatever style you choose, make yours a special tradition. Go all out and make a day of it. Take the kids tree shopping and let them help bring it home. Make hot chocolate and turn on that Christmas music. Sing carols while you decorate and buy a new ornament or use one your child has made and talk about memories of Christmas past as you put em back on the tree every year!

This is the time of year for celebrating, for making new memories but remembering the old as well!

I know we all get wrapped up in the gift shopping, the Holiday parties, the wrapping, the cooking and that is fine, but take that extra day to really do something special and relax with the family.

I have to say that my mom ALWAYS made decorating the tree special and now I do it for my son as well. He cannot wait to take out all the ornaments and help put them up!

(Funny true story inserted here)

Last year I would come into the living room (where our tree is up now) and I couldn't help notice that ALL the decorations on the tree had been moved around. This happened several times and after I checked my eyes or possibly thought I was going crazy, LOL, I realized that my son was doing it the whole time. He just loves the ornaments and I guess feels so excited about decorating that he re-decorates every day!

Oh, the joys of motherhood! :)

All I Want For Christmas

I hope all of you had a fantastic Thanksgiving and were able to be with friends, family, and loved ones. My Thanksgiving was quiet, but that is what I really needed this year. Just a few family members and my son to fill my day with peace, love and GOOD food!

I have decided to make a list of what I would love for Christmas, just in case Santa is reading my blog!!! LOL

Okay, here it is...
I would love to have two working bathrooms.
I would love to have new insulation so this house wasn't always so cold.
I would love to have a car that actually works when you need it.
I would love to have storage from IKEA so I can put all those boxes away.
I would love to have new steps up to the house that are not falling apart.
I would love to have a brand new bedding set for my bed...now that it's just me in it!!! :)
Oh and I want to win the Lotto...one of those HUGE jackpots! (But I guess you have to play to win right? LOL JK)

But what I really want the most is for my son to grow up happy, cared for, healthy, and strong and know that his mommy loves him more than anything in this world. I want my mom to be happy and comfortable and get paid back for all the wonderful things she does for everyone BUT herself! She deserves the world and more!

I would like my son to appreciate that we WILL have food on the table and that their are many many others who have nothing.
I want all the soldiers serving this country to know that we appreciate them and all of their families who miss them so much during the Holidays!
And I want all of you to have the "Best" Holiday ever!!! Spend it with family, with friends, with neighbors and co-workers, just enjoy every minute. And don't forget the reason we celebrate Christmas....

Life is so short, it changes so quickly. And after going thru what I have the last month or so I have come to realize that more so than before. I guess you have to live it to understand it!

It's A Beautiful Day....

Hi everyone. I must say that the response I got from so many was overwhelming and I cannot "thank you" all enough for the lovely messages you left me!!!

It really is amazing that people who hardly know you at all can offer their advice or support in such a kind and caring way! (Really when I think back, it was all of you who left me the kindest thoughts that got me through that 1st, 2nd, or 3rd day when I just needed to read that I CAN make it!)

And on a happy note...I AM feeling a wee bit better! Yay! It's nice to be able to say that. And one of the reasons is that I have decided to be an AVON rep...can you believe it? Yes, me...LOL

AVON is a great company, they provide you with all the tools necessary to basically start your own business for very little money. And being a new single mom in my situation, that looks pretty darn good!

I Never Thought This Day Would Come...

Well folks, I wish I had better happier news to report. I always enjoy sharing uplifting thoughts or ideas with you, but today is not so bright or happy, at leased not for me.
I recently found out my husband had decided to move on and as of now we are starting the process of divorce. Needless to say I was a bit surprised, but more so saddened, hurt, and a bit terrified. (Was everything wine and roses? NO. But I did expect some participation in counseling or therapy, something to show that you still want things to work! That your family was important enough to try.)

I'm just at a point of shock really. I wanted to ask any of you reading this for a word of advice, support, or maybe just wanted to get it off my chest somewhat as well. I am raising a son as a single parent, running a household on my own, and well...I am in desperate need of a job. (I figure a part time one is a good place to start seeing I have been out of the work force for oh, six years now! I'm not even sure where to go or what to look for....Yikes!)

Ya know, to be totally honest I never thought I would be writing this kind of news. When I married it was for better or worse, sickness and health, and even richer or poorer...and Lord knows I've seen the poorer much more during these years!!! I've been cheated out of my family life, of sharing time with a man I loved so much, and the dreams we once had together.

Where do I go from here and how do I begin to pick up the pieces? That is what I have been thinking about for the last 2 weeks. It takes a lot out of someone. The gal I once knew that liked to sneak a cookie or two at night has been avoiding food like the plague. The woman that waited for her husband to come home after work has been turned into someone who stands around and looks at the door...

Does it get any easier? Lord I hope so.

Some Halloween Fun and other stuff....

My son went to a local city Halloween/Autumn gathering on Saturday and had the most fun. For $10 he got to paint a pumpkin, go on a hayride, eat cider and doughnuts, trick or treat, and just be a crazy kid! His favorite was the face painting and he chose to be a tiger.....ROAR!!! :)

And in other news...this is the hubby and adorable kitty lounging after a hard day of ah, hmmmm....I'm not sure what they did! LOL

I just had to take this pic...look at that leg stretched WAY out. My kitty really thinks she is queen of the castle! :)

Costume FUN...How PURRfect!

Well, here we are at that time of year again...Halloween! My son is six years old now but really ever since he was three years old, he has decided on his own costume. First it was a Fireman, then a Doctor, and last year he chose a Race Car Driver. And this year, for whatever reason...he wants to be a cat. And not just a cat, but a Brown Cat. I have no idea why, but it is his choice. (My mom seems to have a problem with this and I'm not sure why? Any thoughts?) I think it's cute...He's a quiet, kind, light-hearted, smart and fun little boy! And if he wants to be a Brown Cat...well, that is fine with me!

Do you all let your children choose their own costume for Halloween?

Well, whether you do or not, here are some cute costume ideas for ya.

The cutest little Ladybug. Just buy a black sweatsuit, shoes, headband or hat and then do a little gluing and sewing and...voila, done!

My personal favorite this year is the LEGO boy/girl. This one is just amazing and original. Just get a box and and matching clothes and you have a a pretty cute one folks!!! What's your favorite color?

I think any little girl would LOVE to be a butterfly. Isn't this costume precious? And the best part is you could do this one for a baby, toddler, or little girl.

Okay...this has to be the most creative one yet. My son LOVES cars and he would go bonkers for this one. How cool? There isn't much to it, but hey...I'm not complaining! LOL

How funny is this costume? I got such a kick out of it...I had to post it. The Sushi Roll...LOL. Now this one would get some laughs and turn some heads I'm sure! :)

Well, no matter what your kids decide...it's all about having FUN and being SAFE right?

Well, I'm off to make a cat costume myself. Anyone have any ideas for the cutest kitty on the block? It's simple, but there has to be a way to make it original. Hmmm, I'm thinking "CATS" on Broadway....lots of fur and a painted face....LOL (Naw, just some whiskers, ears, a tail...anything else?)

Autumn Decor and Dinner

Being Autumn now, I wanted to share one of my favorite recipe's that just screams "warm and comfy"! This is such a great treat for the whole family and you can serve it with a salad, homemade salsa and chips or guacamole, and margaritas...OLE'.

Enjoy....
Chicken and Cheese Enchiladas
Ingredients:
1 small red onion, halved
1 1/2 pounds tomatillos, husked and rinsed
1 to 2 serrano chile peppers, stemmed and seeded
1/2 cup low-sodium chicken broth
Kosher salt
Pinch of sugar
8 corn tortillas
3 cups shredded rotisserie chicken
2 1/2 cups shredded mozzarella and/or Monterey Jack cheese
1/3 cup fresh cilantro
2 tablespoons extra-virgin olive oil, plus more for greasing
3/4 cup crumbled queso fresco or feta cheese

Directions
Preheat the broiler. Slice half of the onion into thin rings and set aside. Place the other onion half, tomatillos and serranos on a foil-lined baking sheet and broil until the vegetables are soft and slightly brown, 7 to 10 minutes, turning as needed. Transfer the vegetables and any liquid to a blender, add the broth and puree. Season with 1/2 teaspoon salt and the sugar.
Meanwhile, stack the tortillas, wrap in a damp paper towel and microwave just until warm and soft, 1 minute; keep covered. Toss the chicken with 2 cups shredded cheese in a bowl. Spoon a portion of the chicken mixture down the middle of each tortilla. Add a few cilantro leaves and roll up. Place the enchiladas side by side in a lightly oiled 9-by-13-inch baking dish and brush with the 2 tablespoons olive oil. Broil until crisp and golden, 3 minutes.
Pour the tomatillo sauce over the enchiladas and top with the remaining 1/2 cup shredded cheese. Return to the oven and broil until the cheese is bubbly and golden brown, 3 to 5 minutes. Garnish with the onion rings, queso fresco and any remaining cilantro.
Per serving: Calories 626; Fat 32 g (Saturated 13 g); Cholesterol 98 mg;
Sodium 1,056 mg; Carbohydrate 46 g; Fiber 6 g; Protein 47 g

WordLess Wednesday..."Summer Break"

Hey Everyone...This is a picture I took at the Northport, MI Marina about five years ago. Isn't it beautiful? It's a quaint little town, with gorgeous homes on Lake Michigan and a tiny downtown with shops and country stores and great food. (If your familiar with this area, you know it is just a few minutes away from Traverse City and wine country....so fun and the most beautiful sight seeing ever!)

I'm using this picture for Wordless Wednesday because we have been on sort of a vacation over here the last few weeks. Things have changed quite a bit and I haven't been able to be on to post or visit my most favorite blogs either.

Just wanted to let you all know the situation and that I will be back on real real soon. I miss you all and hope to catch up on all your wonderful posts soon enough.... :)

Honorable Mention...and some GREAT news!!!

Here are my two favorite people (about two years ago)...the ones that mean the most to me in my life, my Mom and my Son. My Mother was the first one after my husband and I to see my son when he was born. In fact, she would have been with me in the delivery but I had a C-Section and it wasn't allowed. (Really she was too scared to come in and watch the surgery as well.)

Anyway, I have been thinking a lot about life these days and how important it is to hold those you love as close to you as possible. I just think that life passes us by so quickly. (I mean look at how fast our children grow right before our eyes...I remember when he was a baby and it seems like yesterday!)

So...Today I HONOR them, my Mother and my Son, and I thank them for bringing so much joy and comfort to my life. There is no greater gift than LOVE!

And on a very happy note, I am so thrilled to tell you that my husband was called back by GM yesterday. He will start on Monday again after being layed off for more than 7 months!!! We are just beside ourselves with joy...and even though we know that this could be only for 1 week, 1 month, or until their plant closes in December, it will help us financially and make us feel like a normal family again. (At leased for a little while!)

Its so funny how things work for me these days. I can have just a horrible day but somehow, someway, I will get on the computer and read some of my favorite blogs and they all just have a way of cheering me up! You all have a way of cheering me up! Yes you do!

And I thank you for that. And I thank you for stopping by my blog to read my posts. Whether they be about some fabulous finds, a recipe, pics of my son, or just anything...my blogger buddies are surely going to give me some comment love...Yay, cause I just LOVE the comments! (Who doesn't right?)

Well, WHEN IT RAINS IT POURS....how true! I have some ladies to thank for some beautiful awards. These are no ordinary bloggers either, they are amazing, fun, creative and kind....and really are the reason I started a blog myself.
So thank you to these fine fine ladies for giving me these thoughtful and sweet awards! I appreciate it more than you will ever now!!!

First up is this wonderful award, Spread the Love, from two of my FAVORITE blogging friends, Mimi at Frump's Findings, and Bunny at The Paris House. Have you been to their blogs lately?
Mimi has the two most adorable children on the planet. She home schools and is just the cutest gal in the world, but most important, she is thoughtful and kind and really just a happy and uplifting person. If you want to smile...her blog is the place to be! Thank you Mimi.
Bunny has the most incredible and amazing home. She has beautiful gardens, fantastic taste in decorating, posts some of the most delicious recipes I have ever seen and besides all that...she is funny, adorable, and her home should be in "Better Homes and Gardens" EVERY week!!! I'm not joking gals...this lady is incredible, and she is one of the most thoughtful people I know. She has children as well and her little one is the cutest little guy...and you can tell by the pictures that he is so glad to have her as his Mommy!!!

It was by chance that I stumbled upon their blogs, and I have come to realize how lucky I am that I did. Thank you ladies.

Next up is this award, I *Heart* This Blog, from Tami at Diary of a Mad Woman. Tami is fun-loving and a free spirit. She has the most amazing sense of humor and sometimes I am laughing so hard at her posts that I have to take a minute before I comment. But most of all, she is inspiring! She has been thru some tough times with her health but I cannot think of anyone else that has more of a positive attitude about life and living and thanking God for all the good in her life. I'm a better person for knowing this fabulous lady...Thanks Tami.

Flowers and Frogs and Bugs, Oh My!

We all enjoy the summer months of beautiful weather, flowers that bloom with gorgeous colors, days by a pool when it's 90 degrees out, and a glass of iced tea or lemonade. It's just a time to be with family and friends and enjoy the outdoors and what nature has to offer.

I know I love to hear the frogs by the lake, and the birds chirping in the early morning. To me it's quite refreshing to see and hear all of the wonderful and amazing things that God has put on this earth! And I'm not the only one!!! My son has become a little "nature lover" as well.

He loves to go to the park and walk on the paths to see the deer tracks, or the many bugs, frogs, and snakes that may cross his path. (For me, the snake part is not much fun...but he thinks they are just "the coolest!" LOL)

So, what do you think happens when he sees Mommy on the computer looking at some artwork of bees, bugs, and frogs??? He just flips out....and with the artwork from Samantha's Art Studio, I can understand why!

I just stumbled onto one of her sites by accident as we sometimes do, and I was so taken back by how life like her paintings were and I had to check em all out. Two of my absolute favorites are...."Busy Bees" and "Poppies."

What else can I say about two paintings that express nature in such a beautiful light? They are so full of color and so real....it's as if the flowers were right in a vase on my table! Not to mention that I absolutely LOVE bright and cheery items these days!!! They just make you feel good, don't they?

Not only does Samantha do beautiful prints, but she also has the cutest note cards with pics of flowers or frogs and bugs, it's your choice. She was so nice to send me two sets of note cards...one with the "busy bees" picture included above and one set of her "frogs!" (My son fell in love with the frogs! He was learning about them at the same time that these came in the mail and just had to take them into his class to show everyone.)

Here is a picture of the frog that my son fell in love with...pretty amazing right? His class thought so too!!! :) Samantha also does note cards with insects as well. Check out her blog for pictures of those and all kinds of other projects she is working on, past and present.

One last thing folks, I think you should see how Samantha puts some of her artwork to good use by beautifying the city she lives in and also calls attention to "pollination" and how important it is for our planet! She participated in "Hydrant Hysteria"... and was picked as one of 58 artists to paint their local fire hydrant. Her design is Pollinator Paradise, here it is on paper.....

Birthday "Tea" Time

This was the beautiful Birthday Tea party that my Cousin and God Daughters did for both my Mom and I...since we both share February Birthdays! (I'm just now getting it posted...hey, only 5 months ago, LOL)

It was so much fun and I have to say that everything was gorgeous. It was like we went to a fancy restaurant for tea and goodies. If you look at the table above (and the pics below) you can see where they had strawberries dipped in chocolate, homemade brownies, lovely caramel and truffle chocolates, and heart cupcakes. (And that was just dessert!) It was hard to decide what to try.... (I think I may have tried one of each...how could you say no right?)

Not only was the food amazing, but the table was set so beautifully as well. The tea cups, saucers, sugar bowl and creamer were all china. And they all were a flowered pattern but every one was slightly different. I'm not sure how much you can see in the next few pics but this is how the table was formally set when my Mom and I arrived.

It was one of the most wonderful Birthdays that I can remember. I felt so special and to be with my family and friends to enjoy that day was just the icing on the "cupcake".

Here is a picture of my two God Daughters that worked so hard to help their Mom with this fantastic party. They are so special and two of the most thoughtful girls I know. (I think they are pretty cute too!) See for yourself....

So next time you wanna have a small and intimate get together for your girlfriends or a family members Birthday, try this fantastic tea party idea. It was formal but fun and just perfect for a Sunday afternoon tea brunch!!! :)

Here I am with my best friend Kristi (I'm in purple, she's in gold) getting ready to head to the prom. That was such a fun day...got our hair and makeup done and the dresses well, we thought we were just the coolest to have such gorgeous dresses to wear out!!! LOL

When I think of the 4th of July...I can remember going to the fireworks on the Detroit River. Boy, That was a grand event to see in person...all those huge fireworks exploding right above my head....(I think I was all of maybe 8yrs old!!!)

But I also think of a small fireworks display put on by my friends dad every year. He did it in his backyard and if you got an invitation....boy, you just thought that was the absolute best! Those fireworks may have been in his backyard but they were just as "grand" and "special" as the ones on the Detroit River!

When I think of the 4th of July, I also think of the time my Mom and I went to Traverse City, Michigan. We stayed in a beautiful hotel, visited the casino, the wine country, the lighthouse, and sat out on our balcony for the most amazing fireworks display I have ever seen! (A memory I will never forget!)
I also think of good friends, great food, patriotic table settings or decorations and even perhaps a fun cocktail. Here are some 4th of July favorites from Martha Stewart.Com.

Making Memories

You know it dawned on me last night that the summer already seems to be going by so fast...it's amazing, isn't it?

This summer we enrolled my son in a local summer camp so he could get out and play with other children, go on field trips, take his lunch, and have access to so much more than at home! There aren't many children in our neighborhood!
I do not regret my decision at all. (I didn't think I was even going to be able to afford it with my hubby unemployed, but we are doing it for my son...pinching every penny!) And he LOVES it!

But I also wanted to make this summer a memorable one for him as well! And the days he is home with me, will be days of lots of fun and creativity. (Whether that be at home or out and about....that's what I have planned!)

Today we went to the farm. And oh, SO much fun! This farm has all the animals; pigs, sheep, cows, goats, ducks, geese, chickens, horses....just a little of everything. Usually there is a special place where you can see the baby animals and they are so precious. We could stay in that area ALL day watching them with the moms. It's so cute!
But today my son decided he wanted to play a bit more so we walked down a really long path to the kids area where they have a playhouse, and some little toys to play on.

Here he is with one of his friends from Kindergarten. They get along really well and he so enjoyed visiting with one of his old classmates. (He still seems to think that he will go to 1st grade with all the same little friends he made in Kindergarten...and the same teacher!!! I'm waiting for the right time to tell him different...Yikes!) Okay...I'm rambling! LOL

Anyway, today was one I won't forget...Not just because my son and I had a terrific, memorable day. But because I read a review of my blog today...(It was a little strange to read about myself, but such an honor!) Please stop over and check it out! READ THE GOODNESS HERE!!!

Pretty Perfect Nails....Maybe

I really wouldn't call myself obsessed about one particular thing. Can I think about something frequently? Sure. But who doesn't do that. Do I change my mind a lot of the time? Yes. But that's a women's prerogative anyway right? LOL

Lately I have been obsessing over my nails though. Why? I have no idea. I have never really been the type to spend much time thinking about my nails. That is one area that I find to be incredibly simple. Just file and go. (Sometimes I will even put a few coats of polish on if I am feeling special or have someplace to go...but NOT often!!!) I just find the natural look is better for me and my line of work. You know, the mommy job!!!
Yes ladies...If you were anything like me when you got pregnant with your little ones, you probably decided to stop doing quite a few things as we were all afraid of the effect it would have on the baby right? Well one of the things I gave up was my fake nails.

Yes, I had fake acrylic nails once upon a time. Not anything fancy or long, just simple and usually a french manicure or neutral color....none of those fancy blues, reds, or corals for me!!! (And never any stencils or airbrushing!!! Yikes.)

If you have ever tried acrylic nails you know how amazing it is to have perfect polish on your nails for weeks at a time. I used to love not having to worry about a chip here or a break there, and putting on my own polish...well, that was a problem for me from the beginning. I mean who wants to take the time to polish your nails only to have em chipped by the morning!!! (And who has the time to wait all night for em to dry anyway right?)
So obviously I used to be a fan of acrylics. But now my nails have paid the price. I'm not really sure what has happened but mine seem to be doing a curling thing if they get too long...it's really crazy! And in the last week or so I have been wondering how I was going to fix the nail problems.
That leads me to the fact that I cannot believe this has become an issue for me. I have so many more important things to concentrate on; the house, my son, the meals, the cleaning, projects, finding a job....my issues are endless. (But I choose to focus on the nails...jeez! LOL)
Well....Today I finally gave in and gave myself a manicure when my son was at camp. I figured I would have enough time to really make em look nice. I do have to say that I am happy with the end result too. They look natural, clean, and very neat! Do they remind me of my beautiful acrylics...well, no. But hey, We don't always get what we want and sometimes what we do get isn't what we should have anyway!!!

Now that the nail problem is fixed I can relax. (Wait...what about my toe nails? They need a little TLC too! LOL)

Buttons and Beads

I don't know about all of you, but I have always been crazy about hair products and accessories. Ever since I was a young girl I loved barrettes, ribbons, bows, clips, and headbands. The cuter the better for me. But as time went on and I became a mommy, my hair has become less complicated and a bit shorter! (I still love all the accessories, but I just do not have time to use em all!)

So, on the subject of hair and accessories...How many of us have needed a bobby pin here or there and do not want to use the plain old ordinary ones we see in stores? (I mean those are really boring!)
I came across the CUTEST bobby pins I have ever seen the other day while surfing etsy stores. Of course I just HAD to find out about em so Julie from DawnWillBreak sent me a sample and WOW, they are adorable!
Check these out....

She uses all kinds of buttons on her bobby pins to make them so colorful and bright...I can really see young girls loving these as well! (Wearing 3 or 4 of em in a row would be so cute!)
Not only that but she also does beaded bobby pins too...

How easy would it be to slip one of these babies in if you need a quick fix or just a simple decoration? And if you have children that dance, you know bobby pins are going to be your best friend...So, why not put a few of these in to jazz up the look?
Besides the cutest bobby pins ever, Julie @ DawnWillBreak has several other items she sells as well. Two of my FAVS are her earrings and bracelets.

The great thing about buying her adorable products is that NO ONE else will have the same item that you do. (She will make you an original item based on your request! How cool is that?)

That's All Folks!

I would just like to say how deeply saddened I am to hear about John and Kate Gosselin and the decision to end their 10 year marriage. (I know, I know...it's a touchy subject!)

As I watched the show tonight, I couldn't help but see and feel the tension between them as they tried so hard to ignore each other while playing with the kids.

Here they are looking happy, but now..who really knows what they were feeling.

Was it the TV show that started them on the path to divorce? I don't know. All I can say is that no one wants to see a family separate. I sure don't.
And it's these little innocent faces that are going to suffer the most....
These kids never asked for any of this trouble. How sad is it that someday, when they are older, they are going to find out the truth of this whole ridiculous situation?
I just hope we can keep these innocent children in our thoughts and prayers and help Kate become a healthy and happy single mom! (That is one tough job!!!)

I would like to say "Happy Birthday" to my wonderful and much *ahem* older son Roan.

Here they are celebrating his birthday at school on the playground...he even gets to wear the magic crown, how fun!!!

The day started out with Roan's Favorite breakfast and then off to Jungle Java for some really fun indoor playtime. If you haven't heard of JJ....well, your just plain missing out!!!

The day went by WAY too fast!!! I wanted to savor my "baby" becoming a "big" boy....I mean Kindergarten Graduation last week and 6yr old this week! Whew!!! What's next? :)

Tick Tock ... I Can't Stop The Clock!

Now, onto what has been on my mind for 3 whole days....

Do you feel old? (I do not mean any disrespect asking this question, really!) But I feel old! I am 37 and have only 1 child, but I STILL feel old! Why is that?

I was thinking about how it feels like just yesterday that I was a young gal of just 20, living in my own apartment, working a full-time job, going to college, had an awesome brand new car, and felt like the world was at my fingertips! (Ahhhh, life was good!)
Oh, don't get me wrong...life is still good! How could it not be with such an amazing little boy at my side? Just looking at his face makes me smile....so life is STILL good, it's just different! (Yeah, I'll go with different.)

I feel like most of you reading this will probably be able to identify with what I am feeling...I mean, I think we all go through times where we lose our own identity or we feel like time is going by twice as fast as we had intended right?

Well....
I went to my son's Kindergarten graduation last Friday and even though I was one of the proudest mommies there, I came home feeling so emotional and crazy....I cried a good part of the day!
I just kept muttering "My baby is in 1st grade" as I walked around the house remembering when he was just born, looking for all the old pictures of him with his binkie, or how cute he looked his 1st Halloween when we dressed him up like a bat! (See what I mean? I'm old! LOL)

I'll be alright! I'm just having a hard time adjusting to the fact that I have a son who is now a 1st grader and on his way to college in the blink of an eye!

I have been thinking lately of the simple pleasures in life. Those little things that just make us smile. What is a simple pleasure for you these days? (It could be a bath or a walk....music or lighting a candle!)

Hometown SWAP

I participated in a great blog SWAP organized by Shannon @ Welcome to The Nuthouse. We were supposed to send our SWAP buddy goodies from our home state...boy, this was just so much fun.
I was so excited to get my package from McBee @ McBee's World. She is from New Mexico and I have ALWAYS wanted to go visit.

I got a really great postcard, Red Chili Powder, 2 Jars of Salsa from Albuquerque, 2 Cucharas Candy Spoons, and the prettiest Virgin Mary Bracelet.
Here are closer pics of the bracelet and the candy spoons....both so cool!

She also sent me the nicest note telling me all about the "goodies" from New Mexico....so sweet!

How many of us are in need of a totally new makeover for the home? I mean, how long has it been since we rearranged the furniture, painted a room, or bought a new duvet for our bedroom?

I think many of us have way too much going on in our lives today. We are wives, moms, friends, cooks, maids, and the list goes on and on and on.

Well, I'm going to be first and stand up to say..."I NEED A CHANGE!"... "YES, I WANT A CHANGE!"
There are several projects that I need to complete, and many projects that have been in the works for two years or more. (OMG...Did I just admit that?)

So here is my plan. I am going to list all of the projects that I want completed throughout the summer months on my blog. Not only as a daily reminder, but also a motivator to actually keep track of what I've done and what is a work in progress.

And that's not even the best part!!! (What is you say?) Well, I am going to do before and after pics of these completed projects in weekly or monthly posts, depending on how big the project or the time involved.

Wow....it has been a long time since I have actually been excited to dig in and get my hands dirty in household projects! But it's time to complete them and simplify my life!!!

LEMON FRESH

Did I tell you? Do you know? I am in love with lemons! (Yes, you heard it here first.) I Love all things Lemon: lemon pie, lemonade, lemon potpourri, lemon candy...(lemon starbursts, lemon heads, lemon jolly ranchers), lemon yogurt, lemon pound cake, lemon scented cleaner, lemon dish soap, lemon candles, lemon hand wash (I am addicted to bath and body works lemon hand soap, mmmmm), lemon marinades, lemon vinaigrette, lemon trees, lemon leaves, lemon drops.... I just *heart* lemons!!!
So...I found some lemon yummies that looked fabulous and I wanted to pass them along to y'all! (If you try any of the recipe's, please let me know how they turned out okay?) Enjoy the LEMON Goodness!!!

Lemon Iced Tea

Ingredients:
2 lemons
4 cups boiling water
6 ginger tea bags
Ice cubes
Honey or sugar to taste

Directions:
With vegetable peeler, peel each lemon in a continuous spiral, carefully removing only the top layer-not the bitter white of the lemon. In large pitcher, pour boiling water over the tea bags and lemon peel. Cover and steep 10 minutes. Remove tea bags and chill with peel still steeping in a covered container.

To serve, remove peel and pour over ice cubes in tall glasses. Sweeten to taste with honey. Makes 4 (8-ounce) servings.

Raspberry Lemon Pie

Ingredients:
1 (10-oz.) package frozen red raspberries in syrup, thawed
1 T. cornstarch
3 egg yolks
1 (14-oz.) can sweetened condensed milk
1/2 cup lemon juice
1 (6-oz.) packaged graham cracker crumb pie crust
Whipped Topping

Preheat oven to 350 degrees. In small saucepan, combine raspberries and cornstarch; cook and stir until thickened and clear. In medium bowl, beat egg yolks; stir in sweetened condensed milk and lemon juice. Pour into crust; bake 8 minutes. Spoon raspberry mixture evenly over top. Chill 4 hours or until set. Spread with whipped topping and serve.

Salmon with Lemon, Capers, and Rosemary
(Recipe courtesy Giada De Laurentiis, Food Network)

Ingredients
4 (6-ounce) salmon fillets
1/4 cup extra-virgin olive oil
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 tablespoon minced fresh rosemary leaves
8 lemon slices (about 2 lemons)
1/4 cup lemon juice (about 1 lemon)
1/2 cup Marsala wine (or white wine)
4 teaspoons capers
4 pieces of aluminum foil
Directions
Brush top and bottom of salmon fillets with olive oil and season with salt, pepper, and rosemary. Place each piece of seasoned salmon on a piece of foil large enough to fold over and seal. Top the each piece of salmon with 2 lemon slices, 1 tablespoon of lemon juice, 2 tablespoons of wine, and 1 teaspoon of capers. Wrap up salmon tightly in the foil packets.

Place a grill pan over medium-high heat or preheat a gas or charcoal grill. Place the foil packets on the hot grill and cook for 10 minutes for a 1-inch thick piece of salmon. Serve in the foil packets.

Friday Photo Flashback...Oh What Fun!!!

Now, come with me down memory lane. (Believe me, this is harder for me than it is for you! LOL)
Yes, I was a cheerleader and pom-pon girl in high school. This one happens to be during my senior year when we had the official pictures taken. I am amazed at my BIG hair...very brown and lots of it with no particular style. What was I thinking? Yikes. (Seriously, If I could have scanned all the other seniors pics as well....SAME HAIR!!! Very funny!)
I was a dancer for 15yrs...started at 3, ended at 18. So, you could say that dancing was basically my life for ALL those years. This picture used to be one of my favorites. It was a very cool dance routine and I just thought this "bright" blue unitard was flattering, hahahaha! That's why it's fun to pull out these old pics....because this outfit WAS the fashion in 1987....I SWEAR!!! LOL Remember the "solid gold dancers"? (Secretly I thought I was one of em!)

These were taken when my son was probably just three years old, look at that little face.

Oh, how I miss the days when he was a tiny tyke like that...he was so cute.

At that stage of life they have so much expression, they are just little sponges that soak everything up and are so innocent and sweet right?
(You'll have to excuse me, I'm just reminiscing about the old days.)

Don't get me wrong, my son means more to me than anything...But, he is also getting older and along with older you have more sassing, arguing, and oh...maybe a little lying, LOL.
He sure is a character!!! Now excuse me...I need to go into his room and watch him sleep. :)

Here is to all of the men and women who have fought and died for our great country! (And also to the men and women who are STILL fighting the war in Iraq...)

Tea Time Anyone

Ever since I was a young girl I can remember my Grandma having these beautiful china tea cups. It wasn't until I was oh, in my twenties, that I finally inherited a few of those gorgeous cups...and I was so happy!
I have since started collected many more of them from estate sales, thrift stores (I think only one has come from there though) and gifts from my cousin and God Daughters.
This is the collection.
I got this china hutch for the sole purpose of showing all of my teacups, teapots, and dishes. (The funny part....I only got 3 place settings of my good china for my wedding shower, Im waiting for the 4th! LOL)

Here is one of my favorite tea cups.
I just think it's such a beautiful shade of blue. And the flowers inside...well, it's like a little surprise! I don't know about you, but I always feel so much more special when I use these precious cups.

To all of you out there who do not use yours....What are you waiting for?

It's that time of year again friends, the time to start thinking about what to get your childs teacher for their dedication, commitment, and hard work throughout the school year!
What do you get teachers these days?
What with the economy the way it is...I wouldn't be surprised to find that many of us just don't have the money to be buying expensive gifts and really, I've never met a teacher that wanted expensive gifts! (I can't speak for all of em.)
Most times, a simple thank you will do! (I should know..I have a teaching degree myself!)

Well, aside from buying/making them a "little" something from your child...I found a wonderful site to make the greatest ecards ever. It's called Hallmark Smilebox. It's really simple with easy step by step directions that even I could follow...LOL.
Being Teacher Appreciation Day at his school, my son wanted to send his teacher a special card that he could add pictures and write a special message. Well, here is what we came up with...Please watch!

Just for the record...I am NOT a baker! I never have been. And I probably NEVER will be!!! Not even the boxed cake kind, the just add water kind, or maybe not even the microwave kind...although I have never tried that option before.
(Okay, stop laughing!!! I feel bad enough without hearing all of you snickering at me! LOL)
I have never told that to anyone until now. And to tell you the truth I'm not exactly sure why I am confessing this little tidbit about myself, maybe it's therapeutic? (One can only hope right? LOL)
Well, my son has been asking for blueberry muffins. Yes, he has wanted mommy to make some since oh....maybe two months ago! I know, I know...I'm a bad mommy but what can I say, I am just not good at the baking thing okay!!!
In my unimaginable guilt, I decided to surprise him with the blueberry muffins on his return home from school this afternoon. (You all remember...he has been sick and out of school for two WHOLE weeks!!!!) He definitely deserved a little treat. Oh, What Mom's will do for our little ones...even if it means we will possibly be totally embarrassed!
So, go figure...I don't think I have enough oil but I use what I have anyway...and I only have skim milk....so I add it and continue on my journey to bakehood. (Is that a word btw?)
And Voila-here is the result of all my painstaking efforts!

Not to shabby eh? I have to say I was pretty proud of myself...(hence the reason I took the picture, LOL)
So, this was the before....And NOW for the after! (Hang on to your hats)

Okay...so they are a "little" to brown on the bottoms, but that is a whole different can of worms so to speak. (I'm gonna have to go to cooking school to get that timing right! LOL)
I have to say that all in all I was thrilled to have the muffins ready when my son walked in the door. And yes, he was SO happy...that he even wanted to give one to his little neighbor friend. (I sort of cringed when he said it, but gave one anyway...thinking "Oh Dear Lord!".)
To my surprise, he came back with a chocolate chip cookie from her.... :)

And that's not all girlfriends.
I was just thrilled to learn I had been given this "FABulous" Award from Tami @ Diary of a Mad Woman.
Is this not one of the cutest awards ever???

She has the most heart and can be just hilarious as well. I encourage you to head on over and check out her blog, it will be time well spent!

I am a scrapbooking FANATIC and I LOVE all things crafty and creative. Unfortunately, my scanner is too small to show you all of my current scrapbooking work...but, I did find a few entries that I think will show just how much I HEART art!

This is a scrapbook I did called "Teaching Is A Work Of Heart!" It was an A to Z book...and I am including just a few of the pages to show what it was all about...hope you enjoy it!

Now...for the real reason I did this, for my son. He is only five but really has a talent for "all things art!" He will paint, draw, color, and just loves to cut and paste projects! I included some of what I consider to be his most "heartfelt" work. He helped pick these out and well, I just thought he should have a say as to what I posted!!!

He LOVES Firetrucks...he painted this at four after we went to visit the local city Fire Department....How FUN!!!

He is a real softy when it comes to Mommy....and he always draws me Rainbows, Flowers, and Hearts...Such a sweetie!

This is his Halloween Marble Art he did at school...that is a really fun project!

And last, we have this adorable reindeer he made for Christmas...it's so funny because we still have it hanging in our kitchen. It's just too cute to take down! (I know all you Mom's can understand that!)

Well, this was just a blast digging out all the artwork and including it for all of you to see! I so believe that having art, both in our schools and at home, is crucial for children to develop their minds and work those little hands and fingers as well!

Sleepy Time

Sleep. Ahhhh, I even love saying the word. Sleep, there I said it again. Who doesn't love taking a little nap when they can work one in right?

(Obviously this isn't a picture of me! (Found it on google.) Darn, doesn't she look peaceful???)

Lately, well actually its been the past SEVERAL years, I haven't been able to sleep through the night! I'm not exactly sure why....It may have started in my college years when I decided that I would stay up ALL night talking to friends and partying in the dorm rooms! (I mean we were aloud to have boys in the dorm room right next to us...crazy!)
Or it could have been when I moved out on my own. I just didn't sleep as well living alone and was up with every little tiny noise. (Hey, I was a gal in my twenties and even though I had the sweetest kitty in the world at my side, she really wasn't much of a help when it came to weird sounds.)

See what I mean, LOL!

I still hear every single sound my son makes....every sneeze, cough, whimper, you name it...I hear it! So, what's a gal to do???
"Ask the doctor" you say...done it. Drink some milk or decaf tea...done it. Take a bath or shower, keep your room dark, make sure your comfy and not to warm or cold, don't exercise right before bed...done it, done it, done it!!! (I have tried EVERYTHING!)
It's getting to the point where I can't seem to function as well as I used to...I'm just too tired! My only saving grace is the fact that my son is in full-time Kindergarten and I can take a nap everyday. If I couldn't do that, I would probably fall asleep while emptying the dishwasher or folding the laundry. Or, while eating dinner...LOL, that would be a funny sight!

I'm sure that there are many of you that can relate to what I am saying. I mean, most of us are moms, we either have to work at a job or are SAHM's and we ALL have the kids, the cleaning, the house, the errands...but without sleep, what's a mom to do?

Well, its off to making dinner now and then a little clean up, followed by some time with the most adorable boy EVER...his bath, a story, and off to bed. Tonight I may just pop in one of my favorite movies and try to relax....I may not get much sleep but life really AIN'T that bad!!! LOL

"Happy With Some Humor on the Side!!!

Since Friday is just about the BEST day of the week, (JUST ABOUT...I'm partial to Saturday and Sunday myself!) I want to focus on what makes me truly happy. I mean the little things we look forward to everyday, whatever they may be, that make us smile or giggle!
Its just like when you hear that really catchy tune on the radio and can't help but re-sing it ALL day long! Or when our children say something so funny...so adorable, we run out of the room and grab the journal or camera to capture the memory so we NEVER forget it!!! (C'mon, we have ALL done that one right?)

I'll give you one example of something that happened to me yesterday. I was in over my head with a really sick son, a broken air conditioner, and car brakes that were in such dire need of repair....that I couldn't even leave the house anymore! So, our air conditioning was fixed by 11am, Yay! (Its okay to be happy about something even though you payed a BIG price to have it fixed, isn't it?) And the brakes were done by 6pm, Yippee! (Again, I'm showing excitement even though the price for my happiness was several hundred dollars, LOL.)
In the midst of all these little things happening, my mom stopped by and brought lunch to me. I cannot tell you all how sincerely touched I was by that act of kindness. (And even now as I am typing this...I'm STILL smiling!)

After she left, I was able to sit down and eat some lunch while my son took the longest nap ever! (Just to let you all know...he woke up feeling much better, so that nap did him so much good.)
It was really nice to be able to have a moment to myself and have a little lunch. Okay, I did watch a few minutes of Days of Our Lives...one of my guilty pleasures I must admit! (giggle, giggle)
But there is one thing that makes me smile ALL the time and I do it...Well, I try to do it everyday! (Okay...it's not what your all thinking but I wish it was...We haven't been doing THAT everyday for some time! LOL)
It is looking at my old scrapbooks. These books I just adore and I try to get them out by myself and reminisce about old high school years or just great weddings that I've been to....and my son loves to search through his baby book and find old family members or pictures of when we were all a little younger and thinner! (Isn't that the truth?)
I thought I would share with you some pictures of my youth, the olden days of life WAY WAY back in the 80's...when the hair was big, the leg warmers were pink, and life was a little less complicated. "Like...Oh My God, Totally Awesome Right?"

Here I am with my Dad...who, as you can probably tell, LOVED to sit in the sun for hours and hours and didn't mind if I did either...(If we knew then what we know now right?)

This was my "sweet sixteen" Bday party. Well, I know I WAS sixteen in that picture, but I'm not exactly sure how 'sweet' I was....Just Kidding Mom! (I'm the Blondie with the big hair and my cousin is the cutie next to me.)

So...enjoy your day today, try to take a moment for yourself, remember to laugh (or giggle as I like to say), and always make time for those little things that make you happy!!

My Sick Little Man

I Am "Thankful" For.... (Ten Things Tuesday)

I just feel that in the tough times we face in this world, (and I'm sure you all know what I mean...you can't even turn on the news without seeing and hearing all of the negative information!) we need to ALL make an effort to support one another and share some positive, happy, inspirational, and uplifting messages.

She will even link your post so that other blogging gals will be able to check out your "Thankful" thoughts for the day. What a great idea!

So, here are my ten things I am "Thankful" for today!

1. The fact that I have the most wonderful son in the world!
2. The new blogging friends that I have made since I started my blog.
3. It was a peaceful day and I enjoyed time with my family.
4. God...(Need I say more?)
5. The part for my central air was ordered today and although is still really expensive...it is cheaper than we originally expected to pay!
6. I gave myself a pedicure...very soothing and now my feet are close to Summer beautiful! (Who wants to see yucky feet in sandals right? LOL)
7. My husband did some long overdue work....and that doesn't happen everyday!
8. That in this time of economic hardship and even though my husband is on layoff...Im thankful for my home and my car. (Some folks have lost one or both!)
9. That my son is doing really well in Kindergarten, he LOVES school and is just showing great progress.
10. And last but not least...Im VERY thankful for having the sweetest and most caring Mother. She never hesitates to show me how important it is to appreciate what you have, LOVE one another, forgive, and take time to laugh! :)

As Mondays go, this was not one of my all time favorites by far! I lost my power this weekend, my car is in great need of brakes, and my central air needs a new motor. (I did not intend this to be a negative post, so here comes the good part!)

My son was staring at me tonight with this grin on his face, much like in this picture above....I didn't know what to make of it really, until he asked, "Do you know why I am staring at you Mom?" And his response was one I will never forget. You know what I mean right? Those little things our children say that make us smile, make us remember that all is GOOD in the world, at leased our little world inside the four walls we call HOME!!!
He said, "Because your beautiful!" Exactly like that...."I'm staring because your beautiful!"
It amazes me that a five year old could have that much heart. But that's just what it is...he has an innocent heart, one that just says what it thinks.

Not long ago he told me that he was going to marry me someday....oh, and I thought that was just about the cutest thing in the world. I can't help but wonder what is coming next....(I'm sure it will be something good!)

Whats For Dinner Mom???

This is called "dinner in a pinch!" LOL

My mom has been serving this Cabbage Casserole for years! I have always enjoyed it and I have to say it is a very budget friendly dish as well...And in todays economy, budget friendly is the way to go!

Cabbage Casserole
1 Head Cabbage
1 lb. Ground Turkey or Ground Sirloin
1/2 Onion
1 tsp Garlic
2 Tbsp Olive Oil
2 or 3 Cans Tomato Soup
1 Jar Canned Tomatoes-Drained
1 Cup Brown Rice
Fresh Parsley and Basil-Garnish
Salt and Pepper

Use your largest skillet and saute onions, garlic, and cabbage in 2 T olive oil until tender. (About 15-20 min) Add Tomato Soup, Canned Tomatoes, and Brown Rice and let casserole cook for another 15-20 minutes. You can saute the ground meat seperately and drain fat. Add meat to casserole and add salt, pepper, basil, and parsley to taste. Serve with fresh bread and salad or fruit!
Its quick, easy, and its a definate money saver....Hope you enjoy it!

To my astonishment I had been given "My First Award" from Betty at "Its Me Betty" ... Oh, over a month ago! (I have been MIA for awhile due to some personal circumstances! But back at it now...Thank Gosh!)
Anyway, Betty is just one of the nicest, kindest people and really an all-around great person and friend! I can't remember exactly how, maybe it was Twitter or Twitter Moms...but she befriended me without hesitation and always has a kind word or answer to any question! She is one of the original "Goodies"!!!

Holidays....Such Great Memories.

Well it is official...I've finally finished putting away ALL of my Christmas decorations. I find that this is such a hard thing for me to do and it doesn't get any easier as the years pass.
I just love to decorate the house with all of my favorite decorations, the collected items from friends and family, or just the simple things that my son brings home from school. You know the ones I'm talking about right? All of those great homemade gifts they make with the glitter and the glue and the paint. The ones that you just hate to part with when the Holiday is over....so you keep them out as long as you possibly can.
Now that all of those memorable items are safely put away in their little plastic homes, I'm left with an empty feeling. What do I put in their place now? My house looks so plain and uninviting. And my son just keeps telling me we should leave all of the Christmas decorations up. "We can celebrate Christmas all year Mommy!"

Kids just have that way of making you rethink your decisions, even though you know all the stuff has to be put away to make room for the Valentines, St Patrick's Day, Easter, and 4th of July decorations right?
So, as much as I hate "Goodbye's"....I will say farewell once again to Christmas and look forward to the New Year with a new attitude and a newly decorated home. (And hopefully a few coats of fresh paint!....Now just to decide on the color, lol.)

"Let It Snow, Let It Snow, Let It Snow"

It is amazing how much the weather has an impact on our lives, especially when you live in the Midwest. I can remember growing up as a child just loving the cold and how the snow seemed to bring so many new and adventurous activities to light. And no matter how long we stayed outside, or how cold we got...we always wanted to head back out asap!

Well today was a day I will never forget; my son's first snow day.

I'm sure we all can remember when we had those snow days right? How exciting it was to be able to stay home and just play! Well, that is what we did today. And you can tell from the BIG smile on his face (above) that life is GOOD! :)

I bundled him up pretty good but he still got the red cheeks and no matter how many times I told him to come in....he went running away and landed in the middle of highest snow pile. That was okay with me....to see my son enjoying such a wonderful day, well....those are moments to really cherish!

I hope you were able to make some snow memories with your children too!
